Easy Meatloaf Muffins

Here is one of our favorite dinners. It is an easy meal to whip up when you are pressed for time. You can serve them with potatoes, sweet potato fries and veggies!!  My son loves to dip them in ketchup!

Easy Meatloaf Muffins




Ingredients:

1lb lean ground turkey or lean ground beef
2 egg whites
1 box Stove Top Stuffing Mix (Chicken Flavor, Whole Wheat)

Directions:

Preheat the oven to 350 degrees. In a large mixing bowl put the ground turkey or beef, egg whites and stuffing mix in it and mix together. Take the meatloaf mixture and roll into balls and place into a greased muffin tin. Bake for 20-30 minutes or until cooked through.

Easy Caramelized Baked Chicken and Cleaned Up Cheesy Potatoes


I am always searching for yummy healthy recipes when I came across this one. I found the caramelized baked chicken on eezyrecipes.com. I also decided to pair it up with one of my favorite not so healthy cheesy potatoes! I LOVE cheese!! It is not natural the love that I have for it...anyways so I decided to try to tweak them to make them healthier. This dinner was husband and kid approved!!

Easy Caramelized Baked Chicken

Ingredients:

6 boneless skinless chicken breasts
2 TBSP EVOO
1/2 cup soy sauce (low sodium)
2 TBSP ketchup
1 cup honey
1 clove garlic minced
salt and pepper to taste


Directions:

Preheat the oven to 375 degrees. In a bowl mix the EVOO, soy sauce, ketchup, honey, minced garlic, salt and pepper together until blended well. Put the chicken breasts into a greased baking dish and pour the mixture into it covering the chicken. Place in the oven and bake for 1 hour or until chicken is cooked and caramelized.


Cheesy Potatoes

Ingredients:

Frozen potatoes (I use southern style)
1 can of cream of chicken
6-8 oz of plain low fat Greek yogurt
onion (I use about 1/4 of an onion)
1/2 cup Colby Monterrey Jack cheese
salt and pepper to taste

*add a little milk to it if it needs thinned out a bit

Directions:

Preheat oven to 375 degrees. Dice up the onion and saute it with a little EVOO. Put the cream of chicken, Greek yogurt, cheese, salt and pepper in a bowl and mix up. If the mixture is a little thick add a little milk to thin it out some. Then add the potatoes and sauteed onion to the mixture and mix well. Place it into a greased pan and bake for 30-40 minutes or until potatoes are cooked through.

*If you want to add a little crunch you can take a handful of corn flakes and crush them up and add them to a TBSP of melted butter and stir up. Then sprinkle them on top in the last 15-20 minutes of cooking.

Chicken Nuggets and Fries

When I decided that I wanted to start cleaning up my diet I wanted to make sure it was something my family would eat. My husband always dreaded when he knew I was starting a diet! So this time I wanted to make sure to change that! I started by taking some of our favorite recipes and just cleaned them up the best I could. One of my sons favorite meals is chicken nuggets and fries so I ended up with this recipe. I hope you enjoy it as much as we do!



Chicken Nuggets

Ingredients:

5 boneless, skinless chicken breasts
2 cups of whole wheat bread crumbs
2-3 egg whites
1/2 cup of Colby Monterrey Jack cheese
1 TBSP Paprika
1 TBSP Chili Powder
1 TBSP Garlic Powder
1 TBSP Onion Powder
1/2-1 TBSP Cayenne (this is spicy so add none or as much as you like)
salt and pepper to taste

Directions:

Preheat the oven to 375 degrees. Cut the chicken breasts into nugget sized pieces. Put the egg whites into a small bowl and in another bowl put the bread crumbs, cheese, all of the spices and mix together. Dip the chicken nugget pieces into the egg whites and then into the bread crumb mixture and get a good coat on them. Then, place them on a baking sheet and bake for 30 minutes or until crispy on the outside.

Sweet Potato Fries

Ingredients:

2-3 Large sweet potatoes
EVOO (Extra Virgin Olive Oil)
Seasoned salt

Directions:

Preheat oven to 375 degrees. Wash and peel the sweet potatoes. Place them into a plastic ziplock bag with some EVOO and seasoned salt. I just make sure they get a good coat but a little seasoned salt goes a long ways! Then put them onto a greased baking sheet and bake 25-30 minutes or until crispy on the outside!

My T25 Progress Update





In 60 days I have lost 16.6lbs and lost a little over 14 inches total!!

The day that I took my 60 day results I had a little bit of a break down. I'm not going to lie I cried a little bit. I wasn't crying because I was sad but because I was proud. I actually started something that I had tried many times before but this time I COMPLETED it. I kept reflected on what was different this time? In the beginning of the challenge group we are asked to write down our "why". Why we wanted to be in this challenge group and commit to this?

This was my "why":
 I am doing this challenge so I can find myself again! I have always been self conscious of the way I looked even when I was thin in high school. I get so involved in taking care of my husband and kids that I seem to put myself last. I want to do this for ME!! I want to feel confident about myself for once in my life! I want to stick with something and make it a lifestyle change for me and my family.

In 60 days, I have not only changed on the outside but I have changed on the inside as well! I don't feel self conscious anymore, I am doing something for me and I stuck to it through the end. Now I have added another "why" to my list and that is to help others feel this way too! I want to help people figure out what their "why" is and help them accomplish it. 

 This was an awesome experience with an amazing support system from people that started out as complete strangers from all of the United States! It is so nice to have these people supporting you because they know exactly where your coming from. We are there to cheer each other on and hold each other up when we feel like we are falling. I am so happy that I decided to step out of my comfort zone and make this commitment. I accomplished my 60 day goals and tackled my "why"!
